I have no idea whether or not you can do this in Windows or Mac, but in Gnome on Linux, you can maximise a window in one dimension if you choose. A left-click of a window's maximise button is a full maximise in both directions. A right-click of the maximise button will maximise in the x-axis, so it'll get wide and fill the screen that way and a middle click of the maximise button will maximise it in the y-axis, so it'll get tall like a column
